Green Goddess Lobster Rolls

Ingredients
1 live lobster
kosher salt
Ice
3 celery stalks, finely chopped (brunoise)
1 bunch of green onions, finely sliced
1 ripe large avocado, chopped in small cubes
1/2 cup of freshly chopped dill
3-4 tbsp of mayonnaise
1 tbsp sour cream
Lemon zest of 1 lemon
Juice of 2 lemons
The Garlic Box Ultimate Smoked Garlic Seasoning (optional), 1/2 tbsp
Freshly ground black pepper
Salt to taste
4 sesame split-top hot dog buns
2 tbsp unsalted butter, room temperature
Lemon wedges



Preparation
Step 1:
Bring a large pot of water to a rolling boil. Salt the water generously. Water should be as salty as sea water. You can include celery, onions and lemon scraps in your water to add more flavour. Depending on how big your lobster is, it will take about 7 minutes cooking time per pound. Add 3 minutes per pound afterwards. Mine was about a pound and a half so I cooked it for about 9 minutes. If you're making a large quantity of lobster rolls I suggest cooking them one at a time. Place lobster head first and quickly cover with lid. Start counting down the time when water starts to boil again. When lobster is done cooking chill in an ice bath to cool down.
Step 2:
In a large bowl mix celery, green onions, avocado, dill, mayonnaise, sour cream, lemon zest and lemon juice.
Step 3:
Time to extract the lobster meat. If you're not sure how to do this step here is a video that will guide you through:
Step 4:
Roughly chop lobster meat and add to the lobster roll mix. Season with kosher salt, freshly cracked pepper and smoked garlic seasoning (optional).
Step 5:
Turn on BBQ or heat a large skillet. Butter both sides of hot dog buns and grill flat side down until golden. Do the same on other side.
Step 6:
Fill buns with lobster roll mixture. Serve with lemon wedges, more chopped dill and kettle chips. Enjoy!
