Tomato and Peach Salad with Bellini Vinaigrette (Eatable Popcorn)
In collaboration with Eatable Popcorn I’ve created some delicious recipes which highlight their popcorn. In this recipe I’ve featured Poppin’ Peach Bellini; popcorn infused with real peach wine from the Niagara Region. The idea behind this recipe is to use popcorn as an alternative for croutons.

Ingredients
For the Salad:
6 cherry tomatoes, cut in half
1 peach, blanched, peeled, pitted, cut into 8 pieces
1 tbsp of pesto
2 tbsp goat cheese
1 tbsp chopped nuts such as pecans, walnuts, almonds
micro-greens such as basil sprouts
edible flowers
Poppin’ Peach Bellini popcorn from Eatable Popcorn
Salt & Pepper to taste
For the Bellini Vinaigrette:
2 tbsp Dijon mustard
1/4 cup of champagne vinegar
1 tbsp fresh lemon juice
2 tbsp of honey
1 peach, blanched, skin removed, pitted, cut into small pieces
3/4 cup olive oil
Salt & Pepper to taste
Preparation
Step 1:
Wash peaches. Fill a large pot with water and bring water to a boil. Using a sharp knife, cut a shallow X on the bottom of the 2 peaches. Immerse peaches in the boiling water. Cook for about 2-3 minutes until the skin of the peaches starts to peel. Using a slotted spoon, transfer peaches to a bowl of ice water to stop peaches from cooking.
Step 2:
When peaches have cooled completely, use a knife or your fingers to peel away the skin. Cut peaches in half and take out pit. Cut the peach in half and cut into 8 pieces. The other peach will be for the Bellini Vinaigrette. Set aside.
Step 3:
Make Vinaigrette: In a blender place mustard, vinegar, honey, peach, lemon juice and blend until puréed. With the blender still on, pour the olive oil in a very slow steady stream. Season with salt and pepper.
Step 4:
Assemble the salad: Mix goat cheese and pesto together to make a smooth paste. Divide mixture onto 2 plates and spread the mixture evenly. Place 4 pieces of blanched peaches on each plate. Wash and cut cherry tomatoes in half. Place 6 half tomatoes on each plate. Garnish with nuts, edible flowers, sprouts and Eatable popcorn. Season peaches and tomatoes with salt and pepper. Dress salad with the Bellini vinaigrette.
