Miso and Maple Glazed Cedar Trout
Ingredients
1 rainbow trout fillet (approx. 280g)
1 tbsp dijon mustard
1 1/2 tsp miso paste
1/2 tsp minced garlic (1 small clove)
1 tbsp minced ginger
1 tbsp dark robust maple syrup
1 tsp sesame oil
2 tbsp olive oil
2 tsp fresh lemon juice
maldon salt to finish
Preparation
Step 1:
Soak cedar plank in warm water for 1-4 hrs.
Step 2:
Whisk dijon mustard, miso paste, minced garlic, ginger, maple syrup, sesame oil and olive oil in a bowl and set aside. Place rainbow trout in a dish and pour marinade over fish. Keep in fridge for 30 minutes to an hour.
Step 3:
Set oven at 425°F. Take cedar plank out of water and pat dry. Place trout fillet on cedar plank and bake on middle rack for 12 minutes. Set oven to broil (500°F) and let fish caramelize for 3-5 minutes until golden brown. Sprinkle Maldon salt over fish and serve.
