Cauliflower Pizza Crust

Cauliflower Pizza Crust

YIELD: 1 pizza

TIME: 1 hr


Ingredients

  • 1 head cauliflower, trimmed and cut into florets

  • 1/2 cup almond flour

  • 1 tsp dried oregano

  • 1/2 tbsp smoked garlic seasoning or 1/2 tsp garlic powder

  • 1/4 tsp crushed red pepper flakes

  • 1 tsp salt

  • 1/4 cup parmesan cheese

  • 1 large egg



 

Preparation

Step 1:

Preheat oven to 450ยบF. Rinse cauliflower, remove the outer green leaves and cut into florets. Pulse cauliflower in either a blender or food processor until fine. Transfer to a microwave safe bowl and microwave on high for 4 min. Let cool.

Step 2:

When cool enough to handle, wrap cauliflower in a clean kitchen towel and squeeze as much liquid out as possible.

Step 3:

In a bowl mix cauliflower, parmesan, almond flour, egg, salt and spices. If you would like to make this crust vegan you can use a flaxseed egg which is 1 tbsp ground flaxseed mixed with 3 tbsp water in a small bowl and set in fridge for 15-30 min until mix has a consistency of an egg. Note: the crust will hold better if you choose to use the egg.

Step 4:

Shape cauliflower into a ball and place in between 2 parchment papers. Use a rolling pin to press and shape dough to a 10 inch round.

Take off the parchment paper from on top and place on a baking sheet. Bake for 10-15 min or until golden. Remove from the oven and spread your preferred sauce and add your toppings. Return to the oven and bake another 10 min or so until cheese has melted. Serve immediately.
