Pouding Chômeur
Ingredients
Sauce
3/4 cup softly packed brown sugar
1/4 cup unsalted butter
3/4 cup whipping cream 35%
3/4 cup pure maple syrup
Cake
1/2 cup unsalted butter, room temperature
1/2 cup sugar
1 egg
1/2 tsp pure vanilla extract
1 cup unbleached all-purpose flour
1/2 tbsp baking powder
2/3 cup whole milk
Preparation
Step 1:
Preheat your oven at 325˚F. Make sauce: in a medium saucepan, combine butter, brown sugar, cream and maple syrup and let cook on high heat until it starts to bubble. Simmer for 20 seconds while stirring. Set aside.
Step 2:
Sift flour and baking powder together in a medium-size bowl. Set aside. In a stand-up mixer with a the paddle attachment, cream butter and sugar together for about 4 minutes on medium-high speed. Reduce speed: add egg and vanilla extract. Make sure to scrape sides. Add flour in two stages while alternating with milk.
Step 3:
Pour the batter into a 9x13 pan and spread evenly with a spatula or with the back of a spoon. Slowly pour the sauce on top.
Place in oven on the middle rack. Bake for about 40 minutes and until top is golden. Serve immediately with ice cream.
