Tropical Chia Pudding

Ingredients
Raspberry Purée
1 cup fresh raspberries
1 tbsp honey
Mango Purée
1 ripe mango
1 tbsp honey
Chia Pudding
1 cup coconut milk
3 tbsp chia seeds
1 1/2 cups vanilla greek or skyr yogurt
1 starfruit (carambola)
4 ground cherries (physalis)
1 gold kiwi
coconut chips
Preparation
Step 1:
Combine chia seeds, coconut milk and 1 tbsp of honey in a mason jar. Shake and leave in fridge overnight.
Step 2:
Make mango purée. Peel mango and cut into pieces. Place fruit in a blender with 1 tbsp honey and purée. Do the same for the raspberry purée.
Step 3:
In a bowl mix yogurt and half of the raspberry purée. You may add honey for desired sweetness.
Step 4:
Start assembling your verrines (or mason jars). Cut all your fruit before. Start with 2 tbsp of mango purée at the bottom of each glass. Add yogurt half way and place kiwi round against the glass. continue adding yogurt until kiwi is covered. Add chia pudding and finish with raspberry purée. Garnish with coconut chips, ground cherry and starfruit.
